Spinach Tortilla


1 tablespoon olive oil
1 onion, chopped
1 (300g) bag spinach
5 eggs, beaten
350g (12 oz) grated mozzarella cheese
1/4 teaspoon salt
1/8 teaspoon freshly ground black pepper

Preheat oven to 180 C / Gas mark 4. Lightly grease a 23cm (9 in) pie dish.

Heat oil in a large frying pan over medium high heat. Add onions and cook, stirring occasionally, until soft. Stir in spinach and continue cooking until excess moisture has evaporated.

In a large bowl, combine eggs, cheese, salt and pepper. Add spinach mixture and stir to blend. Scoop into prepared pie dish.

Bake in preheated oven until eggs have set, about 30 minutes. Let cool for 10 minutes before serving.
